
I made this hummingbird cake last night and iced it with super sticky cream cheese icing this morning. We had a little taste of it at Wolves today and all I can say is – yum. It’s like eating a fancy banana nut cake with cream cheese icing. Here is the recipe:
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 cups sugar
1 teaspoon ground cinnamon
3 large eggs, beaten
1 cup veg oil
1 and half teaspoons vanilla extract
1 can (225g) crushed pineapple, undrained
1 cup chopped pecan nuts
2 cups chopped bananas
Combine forst 5 ingredients in a large bowl; add eggs and oil, stirring until dry ingredients are moistened (do not beat). Stir in vanilla, pineapple, 1 cup pecans and bananas.
Pour batter into 2 greased and floured cake tins. Bake at 180 degrees for 25-30 minutes or until a toothpick insterted into the centre comes out clean. Cool in pans on wire racks for 10 minutes then remove and cool completely.
Spread cream cheese frosting (to follow) between layers and all over cake and then sprinkle the top with chopped pecan nuts. Keep it in the fridge for a little while before serving. Guys this cake is delicious. Again if you try it, please let me know how it comes out x x
cream cheese icing
225 grams cream cheese
450 grams icing sugar
113 grams soft butter
1 teaspoon vanilla extract
Beat the butter and cream cheese together. Then gradually add the icing sugar, beat on high. Then finally stir in the vanilla. The end.

So last night I attempted to make Oreo bonbons, that’s what i’m calling them. They were super easy to make and they taste delicious. So I say 2 chocolate coated thumbs up for this recipe. The only tip I would give is (which I got off one of her other recipes) – place your bonbon on a teaspoon and dip it in the melted chocolate so that you coat the whole thing all the way round. And next time i’m definitely going sprinkle crushed Oreos on the outside. Yes. Click here for the recipe. Oh and let me know if you make them and what you think x x

This is a new flavour Simba is thinking about bringing out – Hahaaa. Vetkoek and polony?! Could you think of anything more bizarre? I tasted them this morning. Wow, weird. It’s like eating a mixed piggy grill from a butchery in Springs that’s been stuffed into a deep fried fist of bread. Yum. I’m posting about it cause i just thought it was funny. Now gold plated-double chocolate coated-cinnamon-peppermint crisp chips i could do. Hells yes.

So last night i attempted another batch of red velvet cupcakes. I have been battling to get the color and the texture right, but i think i have found a good recipe (4th one) which i’m going to super hang onto. The icing calls for cream cheese and mascarpone , i didn’t have both, so i made a simple cream cheese, butter, icing sugar frosting. Yum! But i’m definitely trying the mascarpone next time. If anyone attempts these, please let me know how they turn out, i want to know if the colour was just a fluke or not x-x i will post the recipe up tomorrow, forgot it at home. Obviously.

This my friend’s new beagle puppy called Playdough. Aaaaaaaaaaaaaaaaaaaaaaaaaa! If i could, i would squash this thing into a ball and eat it with butter! Ok, i wouldn’t, but what is it about puppies that make you want to squeeze the bejeezers out of them every time you hold them? Or is that just me? She is the sweetest thing ever and so sleepy. Man, i want a little tiny dog that stays little and tiny forever. Can someone please invent a breed called PuppyForever. Thanks.

last night shane and I made marshmellow icing for some chocolate cupcakes that I baked. i have never tried making it before and It takes quite a while to cook, yes cook, but the outcome is awesome – It’s like you’ve melted a vanilla cloud and it’s almond babies and smeared it on cake.
*this is a picture of thaya’s son, luca. they live in cape town and he has the coolest mom on the block and he is the coolest kid on the block.

last night i decided i would try make one of my most favourite biscuits – jolly jaaaaaaaaaaaammers. flip i can freet these things day in and day out. i followed a recipe in a book that shane bought me called “Bake”. its a wonderful book filled with things that make you wish that your job was to lie flat on your back and eat all day while watching endless episodes of 30 Rock.
the recipe is below, the dough was a bit tricky to work with, just use some flour to deactivate the stickiness and get your sanity back. they turned out really well… i didn’t have a heart shaped cookie cutter, so i used a baby squirrel cutter to make the shape in the middle, not sure if you can see that that’s what it is ha. oh well…. let me know if you make any and how they come out.



i’m going to have a jolly jammer now while i sip tea out my fancy pale mint green teacup that i bought in Port Alfred… i only bought one cup/saucer/cake plate, wish i could of bought the whole lot, but it was too much cash monies. i did however snap up the cake platter too, it was my most favourite piece and it was onlyR50. ok got to go, can’t drink, eat and internets at the same time. enjoy your monday xxxxx
